Subject: [PATCH] doc/ffmpeg: drop misleading claims from -stats_*_fmt

The {br}/{abr} directives are not limited to post-encoding, they can
also be used pre-muxing. The already-present {packet} tag describes this
more accurately, so just drop the assertions.
